Slow Cooker Pork Chops with Onions – Easy Tender Dinner Recipe

If you’re looking for an easy dinner that requires very little preparation, these slow cooker pork chops with onions are a great choice. The pork cooks slowly until tender and juicy, while sliced onions, garlic, and seasonings create a flavorful sauce at the bottom of the slow cooker.

This recipe is perfect for a busy weekday because you can prepare everything in just a few minutes and let the slow cooker handle the rest.

Ingredients

4–5 thick-cut pork chops

1 large onion, sliced

3 cloves garlic, minced

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried thyme

½ teaspoon black pepper

½ teaspoon salt, or to taste

1 tablespoon olive oil

1 tablespoon cornstarch + 2 tablespoons cold water, optional for thickening the sauce

Fresh parsley for serving, optional

Instructions

Start by seasoning the pork chops on both sides with salt, black pepper, paprika, garlic powder, and onion powder.

Place about half of the sliced onions in the bottom of your slow cooker. Arrange the pork chops over the onions, then scatter the remaining onions and minced garlic over the meat.

Pour the chicken broth and Worcestershire sauce around the pork chops and sprinkle the thyme over everything.

Cover the slow cooker and cook on LOW for about 5–7 hours, or until the pork is tender and has reached a safe internal temperature of 145°F (63°C). Cooking time can vary depending on the thickness of the chops and your slow cooker.

For a thicker gravy, remove the cooked pork chops and mix the cornstarch with cold water. Stir the mixture into the cooking liquid, cover, and cook for another 10–15 minutes until the sauce thickens.

Serve the pork chops hot with plenty of onions and sauce spooned over the top. They pair especially well with mashed potatoes, rice, roasted vegetables, or green beans.

Tips for Tender Pork Chops

Thicker pork chops generally work better for slow cooking because they are less likely to dry out. Avoid repeatedly opening the lid while they cook, since this releases heat. For even more flavor, you can quickly brown the pork chops in a skillet before placing them in the slow cooker.
