Slow Cooker Beef Shanks are the perfect comfort-food dinner when you want incredibly tender meat with very little hands-on work. Ingredients
- 5–6 beef shanks
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 teaspoon salt, or to taste
- 2 tablespoons olive oil
- 2 carrots, chopped, optional
Instructions
Pat the beef shanks dry and season both sides with salt, black pepper, paprika, and garlic powder. For deeper flavor, heat the olive oil in a skillet and sear the shanks for about 2–3 minutes per side until nicely browned.
Place the sliced onion, garlic, and carrots in the bottom of the slow cooker. Arrange the beef shanks on top.
Mix the beef broth, Worcestershire sauce, tomato paste, and thyme, then pour the mixture around the beef.
Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is very tender and easily pulls away from the bone.
Transfer the shanks carefully to a serving dish. Spoon the rich cooking juices and vegetables over the meat. For a thicker gravy, transfer some of the cooking liquid to a saucepan and simmer until reduced.
